Our Recipe for Your Main Course - Machaca

Just as the ERP is the center of the plate in digital commerce, the main course is the key to a great meal. Our Xngage expert took a twist on a shredded-protein favorite with Machacha:

Ingredients

9-12 oz of roasted green chiles (3-4 cans, or hatch chiles roasted in the oven)
32 oz of roasted tomatoes
Spice Rub
- cumin
- salt
- pepper
- chipotle powder
- paprika
- garlic powder
onions (2) diced
1-2 jalapenos (ribbed, seeded, diced)
cilantro (fresh, washed, chopped)
veggie stock (to cover for braise)
One 3-4 pound chuck roast, pork shoulder or plant-based protein substitute

Steps to Create

Apply spice rub to the roasting protein
Set in slow cooker, or pressure cooker
Cover with onions, chiles, tomatoes, and jalapenos
Add stock up to the top of the roast
If using a pressure cooker: set to 30 minutes on high pressure
If using a slow cooker: set to 5-6 hours on low/medium heat
When time is up, shred with forks
Serve over rice or roll in a tortilla with other ingredients (avocado, guacamole, beans, rice, etc.)

A Great Cocktail (or Mocktail) - The Mastadon

Ingredients

3 ounces pineapple juice
½ ounce fresh lime juice
1 ounce passion fruit puree
2 dashes Peychaud's bitters
12oz crushed ice
Optional spirits for those 21+:
- ½ ounce Licor 43
- ½ ounce Maraschino liqueur
- 1½ ounces blended aged rum
- 1½ ounces bourbon

Steps to Create

Add all ingredients to a mixer at about half speed to slowly thicken. Toward the end, pulse 3-4 times. Aerate and mix, but do not completely blend the cocktail.
Pour in a glass
Add some fruit for a garnish – pineapple, strawberries, citrus
